There's Nothing Like Homemade Guacamole

We LOVE guacamole around here. In fact in makes a GREAT meal in the Summer. Dana and I really enjoy making it together. Here is what you need to make it like we do. Avocados, Cilantro, Onion, Fresh Garlic Cloves, Tomatoes (I like Roma because they are a little sweet), Jalapeños, Lime (lime juicer), and Sea Salt! We like to eat ours with Pita Chips. In the picture are Tortilla Chips we bought those for a party we don't usually eat them but we had some leftover so we ate some. We prefer the Pita Chips though.
Ok Here is how you do it......Chop up Onions,Tomatoes,  Jalapeños, and Cilantro, I like garlic so I think we used like 3 or four cloves in this recipe pressed through a Pampered Chef Garlic Press,( press one and a half Limes in a lemon or lime juicer), Add Sea Salt to taste. Cut the Avocados in half (this time we used 4) twist along the cut and then take a knife into the seed twist and pull the seed out. (you can keep the seeds to put in the guacamole to keep from browning). Take a spoon and spoon out the flesh. Then mash up and stir however you like it. Some people like it smooth we like it chunky.  Make sure you taste it in case you need more lime or a little more salt etc. ENJOY!

Blueberry Smoothie

Blueberry Smoothie
1 Cup Carrot Orange juice
1 Cup Soy Milk
Hand Full Organic Baby Spinach
1 Cup Frozen Blueberries 

These are approximate measurements because I don't really measure things in a smoothie..... Sorry. 



With Spinach just make sure you put the heavier things like frozen fruit on top of it.


I love this Carrot Orange juice I buy it at COSTCO.

Organic Steel Cut Oatmeal

BREAKFAST this morning!

Organic Steel Cut Oats
Organic Virgin Coconut Oil
Sea Salt
Unsweetened Almond Milk
Vanilla Soy Milk
Cinnamon
Bananas
Raisins
Walnuts
Rice Milk


I am eating this as I type ;)

I made this for my family this morning in the rice cooker. I added 3 cups of Organic Steel Cut Oats to the rice cooker and I added water to the 3 cup line and pressed brown rice. I checked on it before the rice cooker was done and I added Almond Milk, and some Vanilla Soy Milk, Sea Salt, Cinnamon, Coconut Oil (2 cereal spoon full) and I stirred it. I put the Oatmeal in the bowl and then sliced up about half of a Banana, Raisins, Walnuts, Rice Milk and I sprinkled more Cinnamon on top!
